PAN FRIED SEA BASS WITH HERBS

 55 g PURE OLIVE SPREAD
 4 SEABASS FILLETS (185G EACH)
HERB SAUCE:
 175 g PURE SPREAD (CHILLED)
 ½ tbsp CHOPPED FRESH DILL
 ½ tbsp CHOPPED FRESH PARSLEY
 ½ tbsp CHOPPED FRESH THYME (USE LEMON THYME IF AVAILABLE)
 1 tsp LEMON JUICE
 250 g WILD ROCKET
 SALT & GROUND BLACK PEPPER TO SEASON
 1 LEMON WEDGES TO SERVE
Herb sauce:

Melt the Pure spread in a pan over medium heat, add the herbs and reduce to a simmer.

After 5 minutes add the lemon juice and black pepper and whisk until thoroughly combined.

Seabass:

In the meantime, pan fry the seabass in the Pure spread for 8 minutes on each side.

Serve the fillets on top of the rocket, drizzle with the herb sauce, and serve with lemon wedges.
